Home Chef - Cheesy Roasted Red Pepper Lasagna Skillet

Another week, another Home Chef recipe! This time I’m coming at you with another pasta dish, Cheesy Roasted Red Pepper Lasagna Skillet. Since I was an Italian chef in my past life (haha) I was so excited for this dish. Not to mention, this was a considered a vegetarian dish and since this is the last week of Lent I needed to make sure I went out strong with eating no meat on Fridays. Also, this would actually make a really good item on your Easter dinner menu.

Baby Spinach
Basil Pesto
Garlic Salt
Lasagna Noodles
Marinara Sauce
Red Bell Pepper
Ricotta
Shredded Mozzarella
For once, I had little prep to do and you know I was happy for that. If you have read any of my past recipe blogs, I hate the prep portion of cooking. I chopped the spinach, combined the pesto and ricotta in a bowl and I stemmed the red bell pepper and cut into quarters before adding to a baking sheet and roasting in the oven for 15 minutes. While the red bell pepper was in the oven, I broke the noodles into pieces before adding to the boiling water on the stove.
Once the noodles were cooking, I took the pepper out of the oven and let them cool on the cutting board before chopping into pieces. After 9 minutes the noodles were done, so I drained them in my colander before adding 2 tsp. of oil to a pan. Once the pan was heated, I added the spinach to cook for 3 minutes until wilted. Then I added in the red bell pepper, marinara, garlic salt and noodles. I stirred this every so often for 2 minutes. I then added the mozzarella to the top before covering the pan and letting cook undisturbed for 5 minutes. Once the cheese was melted, I removed the pan from the burner and topped with the pesto ricotta. Then time to dig in!
This was a nice spin on your typical lasagna recipe. Instead of having to let the lasagna bake in the oven, you can make it quickly by just using your stove. I’m always down to try a new pasta dish and this was right up my alley, especially during this work from home (WFH) situation that we are dealing with.
