Home Chef - Shrimp Campanelle Primavera

Hey Slayers!!

This will be my last Home Chef update for a while. I picked my menu options for the upcoming weeks and I ended up skipping a few, but new recipes will be back soon. In the meantime, I want to introduce a pasta dish that I loved making, because of the ease, and loved eating, because it tasted soooo good! I’m not going to hold you, this dish was from January, but just too good not to share. The dish was Shrimp Campanelle Primavera with Parmesan cheese and zucchini.

The ingredients included:

  • Baby Spinach

  • Campanelle Pasta

  • Garlic Cloves

  • Marinara Sauce

  • Peas

  • Red Pepper Flakes

  • Seasoned Croutons

  • Shredded Parmesan Cheese

  • Shrimp

  • Zucchini

Out of all the ingredients, I left out the peas because I have never been a pea or bean person. I also left out the croutons and red pepper flakes. I did follow every other step exactly as it appeared on the recipe card. I first started by prepping the shrimp and seasoning, cutting the zucchini into round pieces, and mincing the garlic. Then I proceeded to cook the pasta before using a colander to drain the excess water.

Next, I added 2 tsp. of olive oil to a pan before adding the shrimp to cook for 3 minutes on each side. Once done cooking I put the shrimp in a plate and used the same pan to make the sauce. I added 4 tsp. of olive oil, the garlic, spinach, and zucchini to the pan and stirred every so often until the spinach shrunk (3-4 minutes). I then added in the marinara sauce and ΒΌ cup of pasta cooking water. To finish, I added the pasta and shrimp to the sauce pan before stirring everything together for a minute or two. Lastly, I added in the shredded parmesan to complete the dish. When plating your meal, you have the option to include crushed croutons and red pepper flakes. I decided to forego the croutons and red pepper flakes and it still tasted like heaven. 

As I have mentioned many times, I am a pasta lover and this meal was no different. It required no oven use and lasted a bit longer since it was just me.
